Just the Zucchini Carrot Apple Muffins
Everyone is acting super normal and boring today and giving me nothing to work with. Gee, what an exciting blog – “Chad is on the phone with a client. Hayley is working at her computer. James is on a conference call. The Memorial Branch of Envoy Mortgage provides home loans that close smoothly. Bleh.” Nobody’s even mad at anybody. They all went out for yogurt after lunch and everybody was all happy and smiling.
They leave me with no choice. I’m going to have to give you one of my famous recipes again. This one comes with bribery though, which is probably illegal, but what are they going to do, huh?
If you come in to chat with my favorite ole bosses about a home loan (by emailing me to set up the meeting or contacting them), and tell them that you are only there because your favorite blogger told you to do it, I will personally bake the following (assuming I can still get the ingredients in season), and deliver them to your meeting.
Just the Zucchini Carrot Apple Muffins
Oven temp: 375
2/3 cup organic applesauce (you can make your own by finely shredding an apple or two)
2 eggs
½ cup sugar (or you could use just 1/4 cup if you fancy)
½ cup brown sugar
1 tsp vanilla
2 cups flour (you can use up to half wheat flour if you like)
1 tsp baking powder
1 tsp baking soda
2 tsp cinnamon
1 ½ cups finely shredded organic zucchini with peel
¾ cup finely shredded organic carrot
Beat apples, eggs, sugars and vanilla. In separate bowl, combine the rest of the dry ingredients; then stir that into the apple mixture.
Fold in the veggies. Pour into greased muffin tins ¾ full. Sprinkle the tops with just a tiny pinch of sugar. Bake 375 for 17 minutes.
